Oven Baked Eggplant and Tomato Topped with Mozzarella  بتنجان باطماطم في الفرن


Eggplants are a rich source of vitamin C, K, B6, thiamin, niacin, magnesium, phosphorous, copper, dietary fiber, folic acid, potassium, and manganese.

The health benefits of tomatoes include improved eye sight, good stomach health, and reduced blood pressure, as well as relief from diabetes, skin problems and urinary tract infections.tomatoes can increase digestion, stimulate blood circulation, reduce cholesterol levels, improve fluid balance, protect the kidneys, detoxify the body, prevent premature aging.


  • 1 large eggplant cut into thick circles ١ بتنجان كبير مقطع حلقات
  • 2 tomatoes cut into thick circles ٢طماطم مقطعة حلقات سميكة
  • 2 tablespoons mozzarella ٢ معلقة موزريلا
  • Oregano and salt to taste زعتر ناشف
  • Oil spray زيت اسبراى
  • Parchment paper ورقة زبدة

Cut both tomatoes and eggplant , start layering egg plant،spray oil on it or olive oil them mozzarella then tomatoes then mozzarella . Place on the parchment paper in 190 degree oven for 25 to 30 minutes. Place dried oregano on top.

تقطع الطماطم و البتنجان و نرصهم طبقات بينهم جبنة و نرش زيت اسبراي عليهم او نقطة زيت زيتون و نرش جبنة فوق الوش. و توضع على ورق زبدة في فرن ١٩٠ درجة لمدة ٢٥ دقيقة الى ٣٠ دقيقة. نرش زعتر فوق الوش. الف هنا
