Lasagna with a Healthy Twist


Yield : 4 servings

Calories per serving: 384 calories


  • 1 medium minced onion
  • 1/2 cup grated carrot
  • 1/2 teaspoon minced garlic
  • 1 teaspoon vegetable oil
  • 2 tablespoons tomato paste
  • 1 cup fresh tomato juice
  • ¼ cup chicken broth
  • ½ kilo lean ground meat
  • ¾ teaspoon salt
  • ½ teaspoon pepper
  • ¾ teaspoon paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon coriander
  • 1 cup mozzarella cheese
  • 6 uncooked lasagna noodles

Béchamel Sauce Ingredients:

  • 2 cups skimmed milk
  • ½ cup water
  • 2 tablespoons light cream cheese
  • 3 ½ tablespoons all-purpose flour
  • ½ teaspoon garlic powder
  • Salt to taste


Heat a medium saucepan over medium-high heat. Add oil to pan; swirl to coat. Add minced onion, grated carrots and minced garlic, Add meat, and cook for 4 minutes, stirring to crumble.

Season with all the seasoning above, Add tomato paste cook for 1 minute, stirring constantly.

Add chicken broth cook for 2 minutes or until liquid evaporates.Stir in tomatoes juice, reduce heat, and simmer 15 minutes

Preheat oven to 200

For the Béchamel:

Mix the flour with half cup milk in a cup, then pour it in a blender with the rest of the béchamel ingredients, finally pour it in a pan on a low heat till it thickens

Arrange 2 lasagna in a baking dish and Spread 3/4 cup meat mixture on top of it, put 2 tablespoons mozzarella and spread part of the béchamel sauce, Arrange 2 lasagna over the béchamel and then the meat mixture; top with two tablespoons mozzarella and béchamel again.
End the layers with the last 2 lasagna then Sprinkle remaining mozzarella evenly over top then end with the light béchamel , bake at 200 degree for 50 minutes.
