Veggie Loaded Marinara Sauce with Hidden Eggplant صوص الطماطم بالبتنجان

Eggplant contains many vitamins, but its dominant vitamins are vitamin C, folate, B vitamins, and vitamin A. These vitamins improve the body’s overall health, boost the immune system, and improve resistance to various diseases. Eggplant also contains a large quantity of minerals such as phosphorous, calcium, magnesium, and potassium. These minerals help prevent heart disease. Eggplant is also a great source of dietary fiber which keeps the digestive system working properly, and keeps the stomach feeling full after a meal.


Ingredients:

  • 3 big tomatoes
  • 1 big eggplant cut into cubes.
  • One shredded carrot
  • 3 tablespoons tomato paste
  • One big onion( cut into small pcs)
  • Pinch of garlic, oregano, salt and pepper
  • One cup chicken soup or water
  • Oil spray

Method:

Spray a pan with some oil, add onion and stir till its yellowish, then add the eggplant cubes, tomato cubes and shredded carrots, and season it, add the soup or water and leave for 15 to 20 mins till u make sure it’s really cooked.

leave to cool then blend it well in the food processor then return back to the pan for more two mins.

Add the tomato sauce, and leave one min then turn off the heat. Then you can put it over pasta or eat it as a dip with bread thins , Enjoy  🙂

Notes:

For topping this sauce over pizza add one spoon mustard and one tablespoon ketchup and one teaspoon oregano, then top it over pizza

١بتنجان

١جزر مبشور

٣ معلقة كبيرة صلصة طماطم
١ بصلة مقطعة
رشة ثوم بودرة، زعتر، ملح و فلفل
١ كوب شوربة او مية
اسبراى الزيت

: الطريقة

يتم رش الزيت في طاسة و يوضع البصل لحد ما يصفر ثم يوضع البتنجان و الطماطم و الجزر و ضعي الملح حسب الذوق و الشوربة او الماء و يترك على النار لمدة ١٥ الى ٢٠ دقيقة

اتركية ليبرد ثم يوضع فى الخلاط ليتم فرمة جيدا. يوضع على النار مرى اخرى و تضاف صلصة الطماطم و يترك ليغلى ثم نطفى علية و يقدم فوق المكرونة او يستعمل كصلصة للوبيا او الفاصوليا او اي خضار اخر حيث ان طعم البتنجان لن يضهر فى الاكل.
