Ingredients
* 1 tablespoon olive oil
* 1 boneless sliced chicken fillet
* 1 red bell pepper, sliced
* 1 green bell pepper, sliced
* 1 small onion, sliced
* ½ teaspoon salt
* 1 teaspoon paprika
* 1 teaspoon ground coriander
* 1 teaspoon garlic powder
* 1 head lettuce, chopped
* 1 avocado, sliced
Dressing
* 1 tablespoon olive oil
* 3 tablespoons lemon juice
* 1 tablespoon soy sauce ( ignore if on paleo)
* 2 teaspoon honey
* 1/2 teaspoon paprika
Method
1. Pour 1 tablespoon of olive oil into a large skillet. Heat over medium heat.
2. Add in the sliced chicken breast on one side and the bell peppers and onion on the other side.
3. Sprinkle the whole skillet with salt, paprika , coriander and garlic powder.
4. Toss the peppers and onions occasionally and let saute 3 to 5 minutes. Flip chicken slices and continue cooking another 3 to 5 minutes (tossing peppers occasionally) until the chicken slices are cooked through.
5. Remove the pan from the heat
6. In a small bowl, whisk together remaining olive oil, lemon juice, soy sauce, honey and paprika .
7. Place chopped lettuce on a bowl, Add chicken, peppers and onions, and avocado slices. Drizzle dressing on top.
